One of the best ways to customize this recipe is to add your favourite vegetables at the bottom of the baking dish. I added carrots and red radishes, but feel free to add any kinds you prefer. The vegetables will soak up some of the delicious juices from the chicken and hints of garlic and lemon. It's just an explosion of flavour. Oh my goodness. Thank me later.
I used a 3-4 pound smaller chicken for this recipe, but feel free to use a larger one if you are serving more people. Add about 20 minutes extra for each pound of meat. Another option is to cook 2 smaller chickens to save in cooking time and to ensure an even moister end result.
Feel free to add additional flavour factors. Add your favourite seasonings like various fresh or dried herbs and spices. Not to worry if you dislike the taste of lemon or garlic. Adding onions is also a really great option to add flavour. Experiment to find something that will fit your taste buds.
Lemon Garlic Roasted Chicken Recipe
3-4 lb whole chicken
1/4 cup extra virgin olive oil
1 head of garlic, halved
1 lemon, halved
3 tsp salt
Pepper (to taste)
1-2 peeled carrots, chopped
5 red radishes, halved
2 rosemary sprigs
Yield: 4-5 fair portions
Preheat oven to 400 degrees F.
Pat chicken dry (so important!) and cut between the breast and leg areas of the chicken, just enough so that the skin opens up. Try not to cut through the flesh.
Season and rub all surfaces of the chicken with salt and pepper evenly, including the inside cavity.
Place chicken with breast side up on a baking dish, and arrange lemon and garlic face down, along with other optional vegetable ingredients around the chicken.
Pour extra virgin olive oil over the chicken.
Bake chicken for 45 minutes, then remove from oven carefully with oven mitts, baste with chicken juices that have collected at the bottom of the dish over top the chicken with a spoon, add optional rosemary sprigs and then continue to bake for another 15 minutes.
Remove chicken from oven until golden brown and the juices collected between the leg and breast area is clear. Allow chicken to sit for 15 minutes to allow the juices to recollect prior to serving and enjoy.
