Harvest Chicken Salad Sandwich Recipe

I love sandwiches, but you know what I really love? Salad sandwiches. Whoever thought of putting those two types of food together is a genius.

This recipe in particular adds in seasonal food ingredients like apples and cranberries. You're going to fall in love with the creamy, moist and sweet taste, plus crunchy texture, which is what makes it so satisfying to eat.

Try this recipe out for a quick and easy lunch prep. Feel free to double the recipe to prep more for the week. Pair it with some extra veggies on the side for extra fibre, vitamins and minerals. We added cucumbers to our plate, which gave it a nice fresh touch and paired so well together with the sandwich.

How could I customize the recipe to my liking?

I am always for customization of recipes! Remember that recipes are there as a guide for you to follow. Some ingredients are key, but many can be changed.

For example, here are some examples for you if you would like to customize the recipe below:

  • Use chickpeas or eggs instead of the chicken in the recipe.

  • Replace the apples and celery with your personal favourite fruits and vegetables.

  • Swap the walnuts for your favourite type of nuts, do a mix or opt out if you dislike nuts.

  • Don't like mayonnaise? You can switch it to all yogurt, or vice versa.

  • Feel free to add some mustard in if that is a flavour that you like.

  • Add green leaf lettuce or thinly sliced cabbage to up that vegetable intake.

These are just a handful of options. Be creative! Next time you see a recipe, try making it your own to make the whole process more exciting and fun.

Harvest Chicken Salad Sandwich Recipe

Salad Ingredients

1 cup of cooked diced chicken (shredded)*

1/4 cup of chopped unsalted toasted walnuts

1/4 cup of diced apples

1/4 cup of diced celery

Dressing Ingredients

1/3 cup plain greek yogurt

2 tbsp mayonnaise

Salt (to taste)**

Pepper (to taste)

2 tsp lemon juice (or to taste)

Yield: 2 sandwiches

*If you are using canned chicken, try to choose the low sodium or no salt added versions.

** You may not need to add salt if you used low sodium canned chicken.


  1. Mix dressing ingredients together in a small bowl.

  2. Transfer dressing to larger bowl with salad ingredients and mix well.

  3. Serve portion in between two slices of whole grain toast with a side of your favourite veggies and enjoy!
