I am so excited to be sharing one of my favourite recipes with you all.
This simple spinach walnut pesto recipe is super easy and delicious with its deep, rich and nutty flavours. It also has good amounts of heart healthy fibre and fats, plus protein, vitamins and minerals and antioxidants inside to support overall health.
Not to mention, how incredibly versatile it is. Spread the pesto on top of toast as part of a sandwich, use it as a pasta or pizza sauce base, dress it over a salad or use it as a sauce on top of fish, meats, legumes or vegetables. So many options. You take your pick!
Spinach Walnut Pesto Recipe
Ingredients 2 cups of spinach
1/4 cup of toasted walnuts
2-3 cloves of garlic
1/3 cup of extra virgin olive oil
1-2 tbsp of warm water (optional)
Pinch of salt and pepper (to taste)
Yield: 2-8 servings (depends on usage as a spread or sauce base)
Add all ingredients into food processor or blender and blend until a smooth consistency. Feel free to add a couple tablespoons of warm water if you find it difficult to blend or if you prefer a more thin consistency.
Store in container in fridge and enjoy!
