Alrighty, are you ready for the most delicious banana muffin recipe, because I know I am!
Banana muffins are my favourite kind of muffins. This recipe in particular has chocolate chips and walnuts in it. The chocolate chips adds flavour and richness, while the walnuts add healthy fats, protein and a nice crunch. Feel free to substitute the chocolate and walnuts for your favourite additions.
If those bananas are looking brown, it is time to try out this recipe!
What if my bananas aren't brown yet?
Rather than waiting a few days, try out these simple steps to ripen those bananas in no time:
1. Preheat your oven to 300°F.
2. Place your unripe bananas on a baking tray with tin foil or parchment paper.
3. Place the tray with bananas in the oven for about 30 minutes.
4. Remove the bananas from the oven with oven mitts once the bananas become soft and have turned into a black colour.
5. Wait for the bananas to cool down and then remove the peel.
And there you go, ripened bananas ready for your muffin recipe!
BANANA CHOCOLATE WALNUT MUFFIN RECIPE
Wet Ingredients 3 ripe large bananas
1/2 cup of sugar
1/3 cup of extra virgin olive oil
1 tsp of vanilla extract (optional)
1.5 cups of whole wheat flour
1 tsp of baking soda
1 tsp of baking powder
1/2 tsp of salt
1/2 cup of raw unsalted walnuts (crushed or whole)
1/4 cup of dark chocolate chips or chunks
Yield: 12 muffins
Preheat oven to 350°F.
Mash peeled bananas with a fork or masher until a smooth consistency is reached. For convenience, you may choose to blend the bananas with a blender as well.
Add all other wet ingredients into a large bowl with the mashed bananas and mix well.
Add all dry ingredients into a separate bowl and mix well. You may choose to sift the flour with a sifter for a smoother consistency.
Important: Add dry ingredients into the large bowl of wet ingredients. Not the other way around. Add walnuts and chocolate in the bowl.
Important: Mix gently with a wooden spoon or silicone spatula. Do not mix in circular motions, but rather mix in folding motions, gently moving/lifting the bottom contents over the top ingredients until the dry ingredients are incorporated. This will prevent the muffins from becoming dry.
Pour muffin batter evenly in an oiled 12 tin muffin tray, or you may choose to use muffin cups.
Place muffin tray in oven and bake for about 25 minutes.
Remove muffins from oven and allow muffins to cool before serving.
